No Bake Chocolate Nut Bars

People think that eating low carb is hard to do and think you have to give up all tasty treats.
That is definitely not the case especially if you know how to make these scrumptious bars.
They are a sweet treat and loaded with healthy fats that keep you satisfied for a longer period of time. I made these a few different ways, but the recipe below is so far my favorite!

You will need:
2 cups unblanched almond meal
1/2 cup flaxseed meal
1/2 cup shredded coconut
1/4 cup just like sugar
1 cup of melted butter
1 cup sunflower butter (or almond butter)

Chocolate topping:
1 tsp coconut oil
1/2 cup dark chocolate I use 86% cocoa (feel free to add a thicker layer)

Mix the dry ingredients together in a big bowl
Add in the melted butter and sunflower butter stir it up until evenly distributed
Spread mixture into 9 x 13 pan (or a smaller pan for thicker bars)

Then melt the coconut oil and chocolate together in a bowl and layer on top bars.

Refrigerate for about an hour or until chocolate is hardened. Cut into squares and enjoy!
 



Keep bars in the refrigerator for best consistency. Bars will soften when left in room temperature. I also sprinkled some shredded coconut on the top before the chocolate hardened!
