Low Carb High Fat - Meatza

This is a great tasting pizza alternative for people on a low carb - high fat diet. It tastes amazing and is super easy to make. I adapted this recipe after looking through a few different ones on different blogs and recipe sites. I like simple and quick because I don't always have a lot of time to spend in the kitchen and usually when I'm hungry I want food ASAP, so the quicker the better.

You will need:
sweet italian pork sausage about 1 pound
fresh grated parmesan cheese 1/2 cup
1 large egg
Italian spice blend 
pizza sauce (without high fructose corn syrup and low carb)
grated organic sharp cheddar cheese (or cheese topping of choice)
green peppers
black olives
onion
mushroom
(and any other topping you choose to add) 


Crust:
Preheat the oven to 375° F
Mix the Italian sausage, egg and parmesan cheese together in a bowl, then spread thinly and evenly on a 13x9 cookie sheet or baking dish with edges to hold the grease from the crust. (I do not suggest using tinfoil because it was a disaster to peel it away) Here you can also get creative and throw on any other pizza spices you like, I added some Italian seasoning over the entire crust once spread out.  

Bake in the oven for about 25 minutes. Then pour off the standing grease once cooked.



Toppings
Spread on the sauce of choice, I usually go with more sauce on the meatza to keep it moist.
And add all the toppings and cheese you desire.

Then throw it back in the oven at 450° F for 10 minutes or
until cheese is golden brown and melted.
Another option would be to set it under a broiler for 5 or so minutes,
just enough time to see the toppings have been cooked and the cheese melted.


I top the pizza off with fresh grated parmesan cheese.
Cut it up, and enjoy!

dried oregano
dried basil
garlic powder
onions
minced garlic or fresh garlic
